What I’m Snacking On This Week (Hint: It’s Green & Crunchy)

This week, I’m sharing two of my favorite refreshing snack recipes. These are veggie based and super fresh tasting — almost more like mini side salads than traditional snacks. I love eating them on their own, but they also pair beautifully with other dishes to round out a meal.

Cucumber Salad

This has been my go to since sophomore year of college. Variations of cucumber salad have been everywhere on TikTok lately, so I apologize if it doesn’t feel revolutionary… but it’s such a tried and true favorite, I couldn’t not include it.

Ingredients:

  • 1 cucumber

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • ½ tsp garlic (fresh or powdered)

  • ½ tsp ginger (fresh or powdered)

  • Dash of wasabi (optional)

Instructions:

  1. Slice the cucumber as thinly as possible — if you have a mandolin, use it on the thinnest setting. A vegetable peeler can work great too!

  2. Mix together the dressing ingredients.

  3. Toss with the cucumber slices and top with sesame seeds.

Optional swaps:
Add a drizzle of chili oil for spice, or try it with thinly sliced carrots for a crunchy variation.

Warning: if you let this one sit for too long the cucumbers will go soggy/mushy… this is best enjoyed fresh!

Snap Pea Slaw

This one’s a newer addition to my snack rotation, inspired by a recipe from @moss_en_place. It’s incredibly delicious and keeps well in the fridge — perfect for making a big batch to snack on throughout the week.

Ingredients:

  • 12 oz snap peas

  • ¼ cup mayo

  • ¼ cup milk + 1 tsp lemon juice (or use buttermilk if you have it)

  • 1 tsp garlic (fresh or powdered)

  • 1 tsp ginger (fresh or powdered)

  • Scallions, sliced

  • Sesame seeds

  • ½ lemon

  • Chili oil, to taste

Instructions:

  1. Thinly slice the snap peas on a diagonal.

  2. Mix the milk with lemon juice and let sit for 5 minutes to create a quick buttermilk substitute.

  3. Combine all dressing ingredients in a bowl.

  4. Pour the dressing over the snap peas and toss well.

  5. Top with scallions, sesame seeds, and a little chili oil to serve.
