Whatever’s-In-Your-Fridge Toast

A toast to survival (literally).

Mornings are hard enough without having to think about breakfast. If you’ve ever opened your fridge and thought, I have nothing to eat, this is for you.

I call it Whatever’s-In-Your-Fridge Toast— the ultimate bare minimum breakfast that somehow always delivers. You simply toast up a slice of bread and top it with whatever stray ingredients you’ve got from your last grocery run. It’s quick, satisfying, and surprisingly balanced.

No recipe, no stress. Just delicious possibilities hiding in your nearly empty fridge.

How It Works

1. Toast your bread

Any kind works—sourdough, sprouted grain, English muffin, even the butt of the loaf.

Pro tip: If you can, pick up a fresh loaf from a local bakery. It makes even the laziest breakfast feel a little more special.

No toaster? No problem. I get the limited-counter-space struggle. A quick pan-toast on the stove works just as well—sometimes even better.

2. Pick a base spread

This adds flavor, moisture, and keeps toppings in place:

  • Hummus

  • Nut butter

  • Avocado

  • Pasta sauce

  • Cream cheese or cottage cheese

3. Add produce or protein

Use whatever’s hanging around:

  • A fried or scrambled egg

  • Sliced fresh veggies

  • Any greens—fresh or sautéed

  • Leftover roasted vegetables

  • Fresh fruit (I love using fresh berries or stone fruit as a kind of deconstructed jam - it adds natural sweetness without any extra steps)

  • Pickled things (onions, cucumbers, radish, etc.)

  • Cheese (feta, parm, halloumi—whatever you’ve got)

This is also a great way to use up groceries before they go bad - those last bits of spinach, that lone tomato, or half a cucumber? They all have a place here.

4. Finish with something fun (optional)

This is where it gets fancy without trying:

  • A drizzle of honey

  • Salad dressing, olive oil, or vinegar

  • Seasonings (seriously don’t skip this- salt, pepper, red pepper flakes, lemon pepper, or garlic powder can totally transform your toast)

  • Fresh herbs - basil, cilantro, dill, green onion

  • Seeds, nuts, or granola

  • A squeeze of lemon or lime

A Few Lazy Go-To’s:

  • Peanut butter + sliced berries + granola + honey + cinnamon

  • Avocado + sautéed spinach + pickled radish + sliced tomato

  • Hummus + pickled onion + cucumber + feta

  • Pesto + fried egg + parmesan + arugula + balsamic glaze

  • Cream cheese + sliced tomato + lemon pepper

Why It Works

It’s filling. It’s nutritious. It gets the job done without dirtying every dish in your kitchen. Best of all? It counts. You fed yourself—and that matters, even if it was just toast with some random toppings. 

Bonus: When you layer on a bunch of toppings, you not only get more nutrients- you get more flavor too. Sometimes the best combos happen by accident when you’re just trying to use things up. So don’t hold back, pile it on and see what happens!
